Vintage 2016 Les Basses Croix & Les Gillis blanc de blanc magnum (1.5 liter

Exciting blanc de blancs champagne made of chardonnay from two vineyards with old vines, near Sermiers and Écueil. The grapes were allowed spontaneous fermentation, and the wine rested for about a year in used oak barrels before second fermentation. Degorgement took place in fall 2020, by hand: à la volée.
This wine was produced in the cellars of Thomas Perseval. Only in 2020 did Émilien Feneuil get his own wine press.

Feneuil made three barrels of this wine, one of them was used for the côteaux champenois.

A dynamic, complex champagne, in aroma and flavor concentrated fruit, with a savoury finish. In short, a great food champagne.
