The man behind the Ayala champagne is Edmond de Ayala. Edmond comes from a family in which excellence was the norm. So he moved to Aÿ in 1860, where he started learning everything about winemaking. That turned out to be a success and the Ayala champagne house was soon founded. The champagne house quickly became leading, both in France and abroad. This was partly due to his brother Fernand de Ayala. He worked among the British Aristocracy in London in 1863 and introduced the unique champagne to British connoisseurs. The unique style and taste of balanced blends of Chardonnay quickly sold connoisseurs. Around 1920, the house produced around a million bottles per year and the staff grew considerably.
The Ayala champagnes are described as elegant and fresh. For example, the champagnes are produced with a lot of Chardonnay and low doses are used. In addition, freshness is guaranteed by using only the best Chardonnay grapes. These grapes are then vinified at very low temperatures. In addition to their freshness and elegance, the champagnes have a silky texture and a pure taste. The real enthusiast drinks this champagne from a relatively large glass.
