Vintage 2016 Cuvée Totum magnum (1.5 liter)

With Cuvée Totum Émilien Feneuil brings together all his plots and grape varieties. The grapes were picked at the same time and fermented together, spontaneously. After a year of riping on used barrels the wine was bottled for second fermentation. Degorgement took place in fall 2020, by hand: à la volée.

This wine was produced in the cellars of Thomas Perseval. Only in 2020 did Émilien Feneuil get his own wine press. 

A complex, dry and layered champagne with nice freshness.
