Blanc de noirs

This bold blanc de noirs is made of pinot noir grapes from five to six consecutive vintage years. Ninety percent was vinified in oak barrels, the majority of the wine did not go through malolactic fermentation. 
The result is a complex champagne with nice acidity on one hand and full, deep flavors on the other: some red fruit on the nose, and concentrated, dried fruit in the mouth.

An exciting glass, try it with smoked salmon, grilled vegetables or autumn flavors like mushrooms.
