Lovely dry food champagne from southern Aube
De quoi te mêles-tu? blanc de noirs
Dry pinot noir champagne made of grapes from the vineyard De quoi te mêles-tu? ('mind your own business'), planted in 1980. A small part of the wine, only 12%, is aged in oak, without malolactic fermentation. The major part ages in stainless steel, with malolactic fermentation. After second fermentation the champagne is allowed 30 months on its lees in cellar.
In aroma and flavour you'll find lots of fresh fruit and some spices. Refined and lively: a good champagne to serve with food with ripe flavours: smoked fish, roasted vegetables.
